My guilt free delicous discovery

We are rushing around this morning getting ready to go on a 3+ hour drive to a Surprise party… and then we get to drive back home. So if you start to think your Saturday’s getting boring remember you could be driving 6 hours! No… I shouldn’t complain. I get to spend 6 hours talking my sweet husbands ear off. (He should be the one complaining!) πŸ™‚

Here is a quick delicious recipe for your Saturday evening. I feel bad calling it a recipe because it’s soooo easy. It’s more like a discovery that I want to share. Give this a try When you get a sweet tooth in the evening and the people around you are whipping out the ice cream. It’s healthy and satisfying. You’ve probably heard of the wonderful benefits of coconut oil, but if you haven’t check it out here. When you’re going to bed at night you’ll be so proud of yourself for choosing this option over the empty ice cream calories. What more could you ask for?!

Melt 1/2 to 1 tablespoon of coconut oil.

Put 1/2 to 1 cup of frozen blueberries in a mug. It has to be a mug… trust me.

Mix into blueberries 1 Tablespoon Cocoa powder and a pinch of stevia. If you don’t like the taste of stevia you can use a drizzle of maple syrup for sweetener. I love stevia. Calorie free healthy sweetener… what’s not to love!

Pour the melted coconut oil over the cocoa dusted blueberries and give them a good stir.

The warm coconut oil melts over the frozen berries creating a hard chocolate shell.

Now here’s the best part of the recipe. After you’ve eaten all the berries scrape the harden bits of cocoa off the bottom of the bottom of the mug and savor that wonderful chocolaty bite. Mmmmmm….

  1. This looks so good! I’ll definitely try it after I get some blueberries next week. Or maybe I’ll try it tonight with frozen raspberries…hm…
